Impromptu Fettuccine Alfredo

Last night I was sitting around, wondering what to eat for dinner and I had a craving for fettuccine alfredo.

Luckily, and uncharacteristically, I had everything I needed in my refrigerator.  What I didn’t have was a recipe.  So I made one up.  If only all my improvisationscould taste this good.

Warning, I didn’t measure anything, so these are estimates.

Ingredients:

  • 2 servings cooked pasta of choice (I used linguine)
  • 1 tablespoon olive oil
  • 1 clove minced garlic
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • fresh basil for garnish

Heat the garlic in olive oil until it just starts to turn golden brown.  Pour in the cream and heat through.  Toss in the cheese and stir gently until it melts.  You may want to add salt and pepper, but I didn’t.  Pour the sauce over the pasta and garnish with fresh basil.  It makes me hungry just thinking about it.
