So, as you may have noticed, I ate a LOT of sugar during the holidays. All the treats were fantastically delicious, but by the end of two weeks of orange glazed cinnamon rolls for breakfast, cookies for lunch, and fudge for dinner, I was feeling pretty awful.
A friend suggested that I try this 21 day sugar detox and I love a challenge, especially if it has to do with food.
I am currently on day 9 and so far so good. I’m actually having a lot of fun coming up with new things to eat, since this is forcing me outside my comfort zone, and my students are fascinated by the strange things I bring for lunch.
New favorite food: quinoa – easy to prepare, good for you, delicious – what more could you want?
For dinner last night I made grilled chicken, quinoa, and steamed broccoli. Ingredients: chicken, broccoli, quinoa, salt. Done in 15 minutes. Perfect.
Now I hope you’ll excuse the poor photography – I was hungry…
Your photograph of your dinner is beautiful! I was excited to see that you had tried quinoa. We are going to try it too. Is it like rice? How are you, Sweetie? It was so good to see you at Christmas. Believe me, it was the bright spot we all needed! Just seeing your smiling face made me feel better. Love you, Courtney Jo!! Deb
Thank you! It was wonderful to see you too. There’s no place like home. I think of quinoa as about half way between brown rice and couscous. I’ve heard of lots of interesting things you can do with it, but this time I just cooked it in water and I thought it was delicious. Be sure to let me know what you think of it and send me any fun recipes! Love you too!
