Coconut cocoa

Hot chocolate – 60 calories, 0 sugar, 2 ingredients – still delicious?

Answer:  yes!

It’s day 10, and it’s been a long one, so this was an invention of desperation.  I already knew I couldn’t possibly go three whole weeks without chocolate.  Since dairy is out, I picked up some coconut milk early on in this experiment.

I spent a little time asking google about making hot chocolate with coconut milk and unsweetened cocoa, but all the recipes involved adding some sort of sweetener – leading me to believe that my cocoa would probably be bitter and unsatisfying.  So what did I do?  I tried it anyway, clearly.

Ingredients:

  • 8 oz unsweetened coconut milk
  • 1 tablespoon unsweetened cocoa powder

Heat the coconut milk however you like – I used the microwave.

Pour a small amount into your mug with the cocoa powder and stir until smooth.  Stir in the rest of the coconut milk and enjoy.

Now I warn you, don’t go expecting Swiss Miss, but if you like dark chocolate, this is pretty fantastic.  I’m never going to make cocoa any other way.
